Raising the Bar: Cara Cara’s Fresh Chapter Under Bruno Vergeynst

Downtown L.A. Proper’s rooftop gem embraces wellness, community, and California flavor. This month, The Scene caught up with Bruno Vergeynst, Managing Director of the Downtown L.A. Proper Hotel and its signature rooftop restaurant, Cara Cara. Since arriving in spring 2025, Bruno has infused the celebrated space with new energy and a continued commitment to mindful hospitality.
When did you become Managing Director at Cara Cara?
       I joined Downtown L.A. Proper Hotel at the end of April 2025 after serving as Managing Director at Santa Monica Proper. In my role, I oversee all aspects of the hotel, including our food and beverage operations with Cara Cara as the crown jewel of the Downtown Proper experience.
What changes or improvements have you implemented recently?
       In May, our kitchen became completely seed-oil free, reflecting Proper’s dedication to wellness and thoughtful dining. Over the summer, guest demand inspired us to expand seating on our lower deck, creating more space for guests to enjoy the rooftop. We also partnered with SoundCloud for a four-week rooftop music series, featuring incredible DJs and enhancing the lively, community-driven atmosphere that defines Cara Cara.
What is your vision for the future of Cara Cara?
       Our goal is for Cara Cara to remain a gathering place for locals and visitors alike — where the South Park community can relax, celebrate, and connect. We’ll continue building partnerships, hosting events, and exploring new culinary creativity that reflects Downtown’s vibrancy.
Why should South Park residents make Cara Cara their go-to spot?
       First, it’s a welcoming rooftop oasis where neighbors can unwind above the city. Second, our menu highlights fresh, locally inspired dishes and cocktails that celebrate California’s ingredients. And third, our passionate team is devoted to creating memorable, genuine dining experiences — all in the heart of South Park.
What were your impressions of SPNA’s “A Taste of South Park”?
       It was a wonderful celebration of South Park’s culinary energy. We were thrilled by the enthusiastic response and deeply value the connection it fostered.
Cara Cara was voted “Best of the Bites.” How does that feel?
       We’re honored! I believe we won because we’ve stayed true to who we are — approachable, genuine, and proudly local.
Anything else to share with the community?
       Beyond Cara Cara, explore Cabrillo, our ground-floor restaurant with a new breakfast menu, Dahlia, which hosts the best vegan afternoon tea in L.A., and, coming in December, a Holiday Pop-Up Cocktail Bar, a flavorful way to celebrate the season with our community.
